Almond Date Log

This recipe is for my mom. It's reminiscent of a Christmas candy my grandma used to make that she called date loaf. It was a Christmas staple that everyone loved. When my grandma passed away several years ago, sadly, no one picked up the date loaf tradition. This recipe is much more nutrient dense than Grandma's candy, and has far less sugar, but the taste and texture are so similar and delicious! This recipe has sentimental value for me, and i’m so excited to share a bit of my grandma's memory with you all!

•1/2 cup almond butter

•1/2 stick grassfed butter

•1/2 cup fine almond flour

•5 large dates, finely chopped

•2 tablespoons coconut sugar

•1/3 cup finely chopped pecans

Place almond butter, dates, butter and sugar in a sauce pan. Heat, stirring constantly, until butter is melted. Remove from heat. Add almond flour and stir well. Pour onto parchment paper and use the parchment paper to roll into a log. Refrigerate about 30 until log is cooled but still a bit soft. Take it out of the refrigerator and sprinkle with pecans, lightly patting pecans into the surface. Roll back with parchment paper, and refrigerate overnight. The refrigerated roll should be able to be sliced into bite sized candies.
