Grain-free Pumpkin Loaf
The holidays are tough when you can’t have gluten. This easy and yummy pumpkin bread recipe is one you can take with you to any gathering (or keep all to yourself).
1 cup pureed pumpkin
1 cup nut butter or sun butter (I used sun butter but it turns green when it reacts with baking soda!)
1/2 cup coconut or raw sugar
1/2 cup cassava flour
A dash of Allspice
1 tsp cinnamon
2 large eggs
1 tsp baking soda
1/4 tsp baking powder
1/8 cup pumpkin seeds
Optional: 1/4 cup raisins, pecans or dark chocolate chips
Grease 6x9 pan with coconut oil. Pre-heat oven to 350.
Mix pumpkin and nut butter together. Add eggs until well blended. Add cassava flour, sugar, baking soda, baking powder, Allspice and cinnamon. Add optional ingredients as desired. Stir well.
Pour into greased baking pan. Sprinkle with pumpkin seeds.
Bake at 350 degrees for 30 - 40 minutes, until knife comes clean in the middle. If desired, sprinkle with sugar on top and bake another 2 minutes.
